- 5 tablespoons of water *
- 100 grams of unsalted butter
- 85 grams of pitted dates, soaked and mashed**
- 1.5 tablespoons of ground ginger
- 1 tablespoon of cinnamon
- 2 teaspoons of vanilla essence
- 1/2 teaspoon of bicarbonate of soda
- 200 grams of self-raising flour
1. Preheat your oven to 180°C with the fan on.
2. In a deep saucepan, combine water, butter, dates, spices, and vanilla. Cook over medium heat until the butter melts and the dates become soft without any large lumps.
3. Remove the saucepan from the heat and stir in the bicarbonate of soda. Let the mixture cool to room temperature.
4. Transfer the cooled mixture to a large bowl. Slowly mix in the flour until you have a wet and sticky dough. Wrap the dough in cling film and chill it in the fridge for about 1 hour until it becomes slightly firmer.
5. On a well-floured surface, roll out the dough and cut out gingerbread shapes. Place them gently on a lined baking tray and bake in the preheated oven for 8-10 minutes. The cookies should spring back slightly when touched and have slightly darker edges. Allow them to cool completely before serving to your little ones.

NOTES:
- For babies under 1 year of age, use cooled boiled water.
- To prepare the dates: Soak them in a small amount of boiling water for about 5 minutes. Drain the water and mash them with a fork until a paste forms.
STORAGE:
These cookies store well in an airtight container for several days, although there might not be any left!
You can also freeze the dough after tightly wrapping it in cling film.
